Electric choke question

I have an electric choke on my quest.recently,i have had problems during driving.All of a sudden the car gets where it want to buck and stalls.It will crank right back up but tries to flood a tad.sometimes it takes a minute or so to level out,sometimes i have to drive it and let it buck and spudder for a mile or so and it levels out.I have had electrical problems(voltage regulator)but that is fixed.Should I just unhook the electric choke?any suggestions?
Car has a 302 in it.I am using an edelbrock manifold and holley 600cfm carb.

the choke probably just needs to be adjusted, but it could be that the electric part of it has gone bad. try this, start the car cold and take the air cleaner off and watch the choke butterfly as the engine warms up, it should be fully open within a minute or so, if it doesn't open it is probabaly bad or the power wire has come off somewhere, use a test light or a voltmeter if you have one and make sure you're getting power to it, it should be getting a full 12 volts as well. if that checks out, then when the car is having problems, ope the hood and check it again to see if the choke is fully open or closed or if it is starting to open, if it starting to open you probabaly have a loose power or ground wire that is going "open" or losing connection at some point when you are driving. let us know what you find
