When I installed the blower I switched to a 180* t-stat. My question is what would be ideal temperature settings for the high/low fans to come on to alleviate some of the temp gauge creeping up w the a/c on while driving around stoplight to stoplight?

You may have to adjust it based on your car. But the above is a good starting point to use.

Just curious but do you know what the stock fan settings are?

Low on at 220*F (Ford Manual) other sources 208*F. Once triggered it will stay on until the temp drops to 200*F. High on at 230*, whenever the A/C is on and at speeds below 47 mph. Mine is set for low on at 180* and high on at 205* and with the A/C on at any temperature.

Does it do pretty good like that? What degree thermostat are you using?

One more question: When I go to the dyno should I tell the guy a specific degree or should I just be like, "hey, I changed to a 180* t-stat would you change the fan settings please?"

I'm using a 180* T-stat. The T-stat only determines when the water will flow through the rad. In that sense it establishes a minimum engine operating temperature.
