180 degree thermostat will be fine, it's warm enough that the engine will no longer be in WUE and it will be in closed loop.

160 degree T-stat starts teetering on the edge of what's acceptable, 180 is fine.

Do you use the stock temp gauge ?

No, I run a PimpXS (MegaSquirt 3) connected to a Single DIN android based touch screen running Shadow Dash. I see ECT/IAT/TPS/Timing/Vacuum, etc....roughly 16 total inputs as live data. Converted to a GM 8.1L 3 wire oil pressure sensor so I can datalog my oil pressure as well.

The dash is designed by me with TunerStudio and transferred to the stereo in the car via bluetooth.
