Exhaust port bumps

I just had my old 289 heads completely redone, but was thinking of grinding out those lumps in the exhaust ports.
My questions are -

1- Can I do this with the valves in place so long as I clean them out really well?

2- And how much can I safely remove? Is there anything I might screw up in the process?
