I've got a gap of about 3/8"-5/8" between the top and bottom of my fan shroud and the radiator and am wondering what material to use to fill the gap. Any help/thought is appreciated.

Some time ago I had the same issue with a shroud. I took a piece of 1/4" thick black nylon plastic material (had it laying around the garage... used it to cover a workbench) cut it into a strip and rivited it to the top of the shroud to fill the gap. Make sure you make a cardboard template first, as it will be kinda cut with rounded lines to conform to the shape of the shroud so it looks good. Slapped a "Caution Fan" sticker on it too. Worked well, dosent look bad as long as you evenly space your rivits on the material you use.
I was thinking of using some closed cell black foam with a sticky side from HD/Lowes, probably in the door seals/ AC section. I think it comes in varying thickness.

For short term testing, the foam works great. But it doesn't last. The tape gets brittle, and the foam will start coming loose.
Better to use something more permanent.
Here is a shot of the shroud I built for the '66. there is foam against the radiator and the shroud, to get a good compression fit. Once it is dialed in, the foam will come off, and the gaps will be filled with an epoxy/glass/micro-balloon mix, for a clean finished look.
