Head gasket Questions

i was in the process or taking my heads off and having my dads friend port them.... but it turns out that he quit the machine shop he was working at. i took one of the heads off already and if i found out the exact type of gasket could i just buy a set of those gaskets and replace only the passenger side? or is this a real bad idea all together...

If you haven't taken off the other head then you'll be ok with just replacing the side that you have already removed.
