You're the first person I have seen post that actually LIKES the headrests in the S197.

They're not headrests, they are HEADRESTRAINTS. Headrest is an abbreviation.
They are they to help prevent whip lash or worse in a collision, not to have a kip on!

I love the way they look, but I don't often have my head against them. No problems there, tho.
Back on topic, I don't think there's a standard for headrests. A manufacturer migh have one for some of their cars to keep costs low, but I doubt it'd stretch inter-make.

I like the headrests because they nearly elimintate the possibility of whiplash. Since the back of my head touches the headrest, it seems that there is virtally no way for the head and neck to snap backwards if you are rear-ended. I beleive that this type of head/neck protection is a future government standard that was met early by the 05 stang. If anyone want to sell me their headrests (black leather only) and if they retrofit into my 01 Audi A4, then I'll buy them!

There are many other design headrests that are probably more safe than these yet still remain comfortable to put your head against. I find that I cannot put my head straight back against mine without the headrest pushing the top of my head forward slightly (regardless of adjustment). If I adjust it to the TOP of it's travel, I find that it will compress my neck/spine when I push back against it (also not a good thing)..
BTW - for reference - I am 6'3" tall.
I am keenly aware of whiplash (I suffered from it for years) and I drive a racecar in wheel to wheel competition. I wear a HANS device in the racecar and have a very well constructed aluminum seat with integral headrest.
Production cars are not racecars - true - but they can be made to be both comfortable and relatively safe. Visit any Volvo dealer and sit in the car of your choice.

It's what the mustang's going for: aggressive. And a driver looks much more aggressive with their head slightly pointed down! 
I do universally prefer the integrated headrest to the adjustable type.
