so i have a question would the afr 165 cc heads fit on a 289 non roller motor? and if i did that and ended up getting them now could i switch the heads to a 302 out of a 89 later in life? or would that not be any good? also the motor i have i ugess in my 289 is bored 30 over? what exactly does that mean or change about the motor

All 289's are non-roller.
Yes, they should work on a later 302.
30 over is actually .030 inches of overbore in the cylinder. When the bores wear, they are overbored so the rings will seal and control the oil.

Both 289 and 302 share the same bore. Your biggest issue will be whether the valves hit the pistons.

The answer is YES. The main thing you have to consider is that roller 5.0s come from the factory with pedestal mount rockers, while 289s are stud mount.
