Hear gauge jumping

Hey everyone! I have a 98 v6 Stang, and I live in the Midwest (recently it's been very cold) and this is the second time this has happened. My mustang will warm up and I'll begin to drive it to work. Almost immediately, my temp gauge shoots up to hot and appears to be overheating for a few minutes, then it rapidly drops back to normal and stays there. I work about 15 minutes away and I'm not sure if it would happen if I continued to drive. This has only happened on the cold mornings so far, any ideas?

Just wondering. What have you done to trouble shoot the cooling system? Has the cooling system been bleed following the V6 coolant refilling procedures.

IF there is air in the cooling jacket this will make the ECT sensor read LOW. This creates a situation where the motor can be over heating but the gauge will read low. Further, this can delay the T-stat opening at the correct temperature.
