help ordering pistons(compression)

Summit should be able to give you enough piston info to answer some of the question.

Compression height is from the center point of the pin bore to the top of the piston. This is only relevant (to you) as to the block and rod/crank combo the piston will fit.

Have you tried typing "compression ratio calculator" into Google's search engine ??

You have to gather all the pertinent info to plug into the variables and it will give you a theoretical compression ratio.

If this is a stock 302 you have a 5.09" rod, 3" stroke and the CH of the piston is 1.600"

What is the cc of the valve relief, what head are you running?
