How to check oil level in rear end

We just had to change the Pinion Seal on my 96 and want to know if we should fill it till the fluid reaches the filler hole or is there some true scientific way to know how much to put in.

Just like you check your woman...

Stick your finger in the fill hole and if it comes out wet, you are good to go...

should be a little below the hole when the car is level. I use and allen wrench and dip the short end in to check it.
