It's Grilling Time! The Official Stangnet Grill/Smoke Thread

So I started a newish tradition for my siblings and myself. We’ll gather together the first Saturday of every may to celebrate my brother’s birthday. I’m trying to make a thing where us remaining kids can gather together once a year. It’ll be our Mayday party.

Last year was the official first one and I smoked a 17ish pound wagyu brisket, it turned out great.

I just ordered this year’s brisket. A 21ish pounder. The brisket is a little pricey, but what the hell, once a year makes it ok.

I should have it in a couple days, then it’ll sit in the freezer for a month. I ordered now cause I had the money.

I ordered from the same place as last year. Huntspoint. Here’s a picture of the marbling.

I’ve tried three different wagyu briskets now and liked the hunts point one the most by a margin. I’ll post a picture of the real thing when it gets here, should be about wednesday.

I ordered one of these today, they sure seem pretty nice.
I‘ll let you know how it does with the brisket.

Excellent. It tells you the temp of the meat, the temp in the grill, can be programed for what you are cooking, senses how fast the meat is heating and gives an estimate of remaining cook time, tells you when to pull the meat to let it rest, and can be hooked to wifi so you can check the cook from anywhere. I've still got to get the wifi setup, but everything else is from experience.

Remind me why we need women?

So my boss went turkey hunting and gave me the breast from one of the birds.

I’m smoking one tonight, wrapped in bacon. I put a peppercorn spicy rub on them.

I started brining it last night. On to the smoker now. The small one is the tenderloin.

I’ll let you know the results. First smoke of the year.:nice:

Here is the breast, it turned out nice and juicy. I really couldn’t tell it was a wild bird.

The smoker worked great.

So all of my siblings are showing up for the May Day Brisket. There’s six of us left. First time we’ll gather without a funeral in 25 years. I can’t wait to cook that big hunk of cow meat.

Today I got my new Meater thermometer. It may be a week before i test it out,

I also got this mixer this week.

I‘m going to learn how to make brioche bread before I cook the brisket. I really like the flavor of brioche. I’m thinking it’ll make some bitchin’ texas toast to have with the brisket. Anyhow, that’s the first use for the mixer. Tomorrow i’ll have bread.

Got the dough made for the brioche bread.

It uses a crapload of butter, two sticks. Some recipes call for three!

Got it in the proofing bowl. It’ll sit there for an hour or so, then I deflate it and put it in the fridge for awhile.

Probably will have bread by dinner time.

Different recipes stick to the same ingredients though, mainly quantities change.

After 1.5 hours it’s more than doubled.

I folded it a few times to deflate it, recovered it and into the fridge it goes for about three hours.

After that time I’ll shape it into a couple loaves, let it set for another 1-1.5 hours. Then brush on an egg wash and bake it.
