I've had my car for 4 years now and the black plastic by the windshield wipers is starting to turn a little gray. Does anyone know of a product that could protect the plastic from getting brittle and maybe pull the black coloring back out of it?

It's what most people use at the shows and it's cheap. I use it and it works. Makes dull plastic shine again and it lasts about 6 to 9 months. Keeps shine ever after washes and weather. Use it sparingly, it goes on like an oil and is dry to touch when done.

Mother's Back To Black works well, but doesn't last very long.

i like the trim shine from stoners, but that doesn't do that much for turning black black again.

theres a product that my friend uses on his jeep, looks awesome, but is greasy. as long as your not touching it all the time its a good product.
its called black again. his trim is really really really worn. and that stuff makes it look great. brand new.

303 spray is awesome, only thing I use on my plastics. But for trim restoration and to bring back a glow and shine, that Poor Boy's is hands down the best and it last a really long time, even through washes.

I usually use tire cleaner, because I already have some on hand. Works great for pretty much anything black. Works really good on hoses in the engine bay.

But it sounds like you've already got some good advice above.
