Do you have a datalogger? I think with that you are going to really fight clutch consistency problems on the launch, actually, i think you already are by watching the videos. Releasing the button as the pedal is coming out is going to be different every time so you could get a big rise or drop in RPMs as the pedal is coming out depending on when you release the button in relation to the clutch pedal.
Two ways to go in my opinion
Put some kind of switch on the clutch pedal, and use a relay and a momentary button so that when you release the pedal it is the same every time. With this method all you would do was push the clutch in, press the button, and now until the clutch switch is released the 2step is on. I used a nitrous style microswitch on a 1" wide aluminum strip that i attached to one of the brake booster studs and made it to length and adjusted the engagement by adjusting the angle of the bracket.

Or put it on the rev limiter and tune the suspension around that method. That is probably what i would do.
In my opionon, on the 1.86 sixty foot video it sounds like you were way late on letting go of the button and thats why it bogged the engine down so bad, same thing on the run 7 vid. Until you get the two step set up right so that it doesnt have any operator error you are going to be chasing your tail with the suspension because you are adjusting to a launch condition that is not repeatable.
You are close though, it is tough with a stick car. When my car ran high tens i was at a bracket race and didnt have a two step, decided to turn the limiter down to 6600 and left off of that all day, it was the most consistent the car has ever been.
Joe are you using your stock clutch switch to trigger the relay ? I had used the diagram you had given me a while ago to do my friends and I could not get the switch to give me a clean ground to keep the relay latched .Thanks for the feed back. I will look over it again and see if I can pick up on it. The wiring and relay are still in place. Bit would only be a 5 minute deal to put it back on the clutch for some back to back comparisons.
