Does anyone know what the max RPM for a 2V motor and stock oiling system (pan and pump) would be using a 5qt pan? I know the cobras had 6qt and could hit 6800 with a hi-vol pump. Would I be safe to assume 6000 would be acceptable?

Since the redline of the OE 2V from Ford is right around 6000 and there's always a certain amount of overhead built into these designs, I'd say the oil supply side is probably good to 6000 without issue.
The oil drainback side may need addressing if you plan on sustained life at that sort of RPM. The timing chains carry oil into the cylinder heads and if it can't get back to the pan you can get oil starvation issues in some conditions.
For extra margin, you might consider a Cobra pickup and oil pump when (re)building a 2V engine. The pickup has an unshrouded inlet and the pump is 1mm thicker giving more volume.
