I have dyno'ed a few and half make that and the other half made a little more. Still have fuel and tune issues like the R-codes though.

Just for my own curiosity sake. Is a NA 351 just a superchargered 351 missing the supercharger?

Say, for example someone purchased this one, could they change the maf, injectors and add a t rim?

Or doe the car need an entire fuel system?

It really comes down to what year you are starting with. If you want to get technical the 94-95 N/A cars were all supposed to have 30lb injectors and the R- Codes 36lb's with all cars getting the Edlebrock performer cylinderheads. Hypereutectic pistons sit in there. Hell, the new 05's are hypereutectic but they hate detonation and the 94-95 cars had lotso detonation so there is where you hear about more motor failure with the 94-95's.
Sorry, to answer your question the blown cars got a T-rex, 36lb injectors. They did not change out the 77mm MAF in the blown cars or the 65 thorttle body. Once again, the T- Code and R- Code designations are for the 94-96 cars as only 3, I cant rememebr or 4 cars (351's) for 96 were not supercharged. In 97 all S351's were supercharged. In 96 the blown cars got Twisted Wedge cylinderheads, Wiseco forged pistons, 80mm maf but most importantly all of the cars now were OBDII. That's why you are better off finding a 97-98 car if you want a driver and not want to pull the motor. The only thing I have found is the OBDI cars are way more gnarly on how they build power as opposed to the OBDII cars. Dan touched on that briefly before. Going out and buying an S trim or T trim, a 255 fuel pump, building a bracket, sourcing all of the other little ****, discharge pipe, BAP and so on is not the end of the world but??? It would just be easier finding an R-Code cause your going to have to rebuild the motor anyway.
