Question about filling in holes in engine bay

Ok I have seen some guys fill in all the uneeded small hoes in the engine bay, and I was wondering, do u have to weld them, or can u use a brazing rod to do it?

You could braize them but.... why?

I welded (MIG) all of mine up, then used All Metal to smooth them out.

As far as the question as to why, it should be why not? To each is own, of course.
