So any secrets to get to the top nut on my rear shocks in a 83 Convertible??
Looked in my Factory manual and it said nothing.... Tried to come through the trunk and the canvas protector that holds the top when its down is in the way...
What if I remove the rear seat?

I had no issues when I did mine. Just lift/move the top well liner out of the way, remove the trunk interior side panels and your home free. Its tight working space, but doable.
My backseat and the rear qtr panel covers are coming out of my car shortly.. Any easier access from that way?

Yes. you could reach them that way also. I have all of that out of my car and the top well liner which was old and nasty when I replaced the top pump/ motor, all the lines and lift cylinders, also in preparation to replace the top. Unfortunately I fell and broke my right hand a few weeks ago so all that work may be back burned until November or next year possibly
