If the rev limiter is set on 5700, and you hit 5700 does that just take fuel away? That sounds dangerous. If so, is there a way to just make it go to 0 spark?

It pulls fuel. The only way to remove spark is with an aftermarket electronic ignition system. Pulling fuel is not dangerous though - it pulls so much fuel that there is very little energy available to hurt parts - fuel=energy. Ford tests cars on the track by holding them on the limiter for 30 minutes.
