Well I've never set up a Ford six-pak, but I have done a Dodge one...
I set the middle carb as the primary, and used progressive linkage for the two end carbs. That is to say... it would idle and run on the center carb ONLY up to about 1/3 throtle, then the two end carbs would go from closed to WOT in the last 2/3 of the throtle travel. That way it got half-way decent milage while just cruising easy, but when you needed the cfm, it was there. To tune the idle circuit, it helps to have a vacuum gauge, or a tach that you can read from inside the engine compartment. Adjust the idle mixture for max vacuum, or highest smoothe idle rpm, then just back the idle speed screw down to the desired rpm (about 900 in my case).
If you go to a GOOD bookstore, or autoparts store, or may-be call Summit, Holley has a good book on how to set up tri-power (theirs mainly, but the principles apply to most), it's like 29.95 and about half an inch thick. I didn't buy it, but I sure read the heck out of it at the book store.
Good luck...
