Timing on motor with "new" mods

Let me start with what I have so maybe someone can help me with my timing. I tried timing the motor already but the balancer seems to be off because the mark is not where it should.

I have--
Stock 87' short block
GT40x aluminum heads 1.94 with 58cc
crane 1.7 roller
Motorsport B cam
24 lb injectors (also have 30s but I think its too much)
Holley Systemax 2 upper and lower
CNL 76mm
BBK 65mm TB (<--my car whissles when it warms up, could this be why?)
3.73 gears-Motorsport Flywheel-K-Cobra Clutch-Aluminum drv shaft
Underdrive crank pulley (not the really small one)
new water pump and oil pump. AC eliminated.
Stock ignition (have MSD TFI and 6Al, not installed yet)

I pretty much got my timing down by ear and the car moves, but the midrange feels like it sometimes bogs or suffocates when I punch it, then opens up top end. The car also does not want to Idle right either. When I drive then hit the clutch the car will shut off on me at times, (timing? or something else.) The only sensor I have not tried changing yet is the IAC but I think the one I got is good.
Seperate issue-- My car does not run is cool as it did when it was stock. Is this normal? My car will get a little past the midway point on the gauge at times, when before it would only go a quarter of the way up and stay there.
Well enough talk .. if anyone has a little guidance it would be most appreciated.
 
how do you set the timing by ear on a computer controlled car? you should set the base timing to 10 and see if any of your problems go away cause 10 is stock.
as far as temp goes, what stat are you running? if your still running 195 you might want to change it. as the car makes more power heat will come with it. shouldnt be a ton more heat but some
