My best guess would be that Ford just puts a tune in the pcm for daily driving with average performance. When you install a canned performance tune the guy that designs that tune is pushing the limits with ignition timing and such to get the most performance out of it. I would think that alone could push things out of center a bit. I don't know for sure, that's one thing I do not get into.
Doug is known for supplying some kick a$$ tunes and he obviously knows what he's doing. There's plenty of guys out there tuning these cars, but he's one of the best a creating a good base file.
