So, my girlfriend is thinking of getting a used 96-98 style V6 Mustang. I've never owned a v6, only a 2 GT's and a Cobra, so im not really familiar with how reliable the V6 stangs are. Im wondering, should we worry at all about looking at cars with 70k or over miles, are these motors pretty stout? Any real problems to look out for that are common?

If you can find one around 70k you should be good. Probably wouldn't even be halfway through the life of the engine.
Just make sure to stick with '96-'98. The '94-'95's had cylinder head issues, and even though most have been fixed and some never had a problem, it's a good idea not to gamble on something like that.

Regular readers here are probably sick of me saying this, but I have 91,000 miles on mine with not a problem yet.. no oil leaks, no tranny problems, nothing. Starts right up every time and still sounds like a new car.

My car used to be a rental(I think). No problems...they must build these things to be solid.
