You may have had a needle roller lay down when installing the caps. Get all the new bearings standing up and in place, then fill the caps with your favorite grease to hold them in place during assembly. The joint should work smoothly in the yokes when assembled.

The cap locked on so I figured all was good. Could it possibly be something else with the driveshaft?

Did you match mark the drive shaft before removing from the pinion flange?

Are you POSITIVE that the yoke is fully seated onto the pinion flange?

Did you drop or bump the drive shaft while it was out?

Does the U-joint move freely inside the yoke?

I took them back out and re did it. The vibration seems to have stopped however something still doesn't feel right
