Also, the Bullitt has a ford shifter as far as I know. It has a different shift knob, and maybe the throw is slightly reduced from stock, but I dont believe it is anywhere near as short/precise as a hurst.

The MGW is what you need. The MGW is not clunky, notchy, etc like the Hurst. It's smooth, positive, and precise. It's not soft like the stock shifter though so don't expect that. It's adjustability is amazing and only makes a great shifter even better. Once you order the MGW and you started unpacking everything you'll understand why you paid so much for a shifter. I can bet on that.
