I have a crane HI-6S on my car as well as a crane interceptor. Which should I use for my rev limiter, the HI-6S or the interceptor? It seems to me the HI-6S would be the better choice since it takes out spark where as the interceptor takes out fuel, like the PMS and taking out fuel at say 6300 doesn't seem like a good idea to me. I am running a sc-trim vortech on my car. What do you all think?

I'd use the fuel cut especially if you still have cats or are using a wbo2. And the fuel cut doesnt just pull some fuel it cuts it all together so you dont need to worry about running lean or anything.

how would you not be lean if it cut fuel?
The fuel is not lean. It is OFF. There is a big difference. Off means no burning fuel at all. Lean is just a little less fuel than optimum, so the burn is hotter. The fuel cut off is much better and less likely to cause damage than the spark cutoff.
