So I just ordered a pair of 275/40 17 MT ET streets to hopefully fix my traction problems at the track. I have a set of 17 inch stock rims that I'm hoping I can mount these on. I believe these are 8 inch wide rims?? I know it'll be a tight fit but has it worked for anyone else?

if you look at the tire manufacturers recommendations, you need a 9" rim. Brenspeed has been using and selling this size DR with the stock rims since the S197s came out.

many people have used 275s on 8 inch rims with no problems. old school mopar guys even put them on their 7 inch wide stock rims. a 9 inch rim is the ideal size, but will fit on an 8inch wheel.

As others have said, 17x9 would be ideal, but 17x8 works just fine (at least for straight line work - wouldn't push the corners too hard that way).

I run 275/40/17 BFG drag radials on 17x8 charcoal Bullitts for drag days and it works just fine....
