It sounds like a blown head gasket. The reason you may not have water in the oil is that the gasket is blown facing the cylinder so the coolant is getting burned up with combustion. A compression check may be in order. If your pulling heads, I would have them redone by a machine shop if they have any kind of mileage on them. You don't want to do this job twice if you don't have to.
