Hey, I’m installing a holley efi on my mustang, I need to put a coolant sensor into my intake manifold, I’d like to leave my stock sensor in so I don’t have a dead gauge.... I see what looks like a plug of some sort in one of the ports, not sure if there would be coolant flow there.... I’ve supplied pictures of what I am talking about. Any info helps. Thank you!

I believe that is a coolant passage, if it doesn't work there you have two other options, they make a t stat housing with a threaded hole in the top and there is also an temp sensor hose adapter that can go on the top or bottom radiator hose.
That's my contribution.

Pulled out the plug and it was in fact a coolant port, I’ll try it out and see how it works!

Keep in mind that is kinda of a dead end water jacket and the temp may be a little higher there, it will work ok as long as the bulb of the sender does not make contact with metal, I don't think it will.
