Sounds like a stuck/sticky thermostat. Not sure bout stangs, had to replace one on a mazda cx7 recently. It was a two man job but easy enough and the mustang's engine bay is much more spacious.
Also at least on a cx7 stuck thermo means engine runs too lean so get it replaced sooner rather than later.
