351w, '68 Head Gaskets

351W stroker in a '68 - can I change the head gaskets with the engine in place, or is it engine out?
What gaskets would you recommend - GT40 aluminium heads, CR around 9.5:1, carb only and street use?

as long as you dont have studs changing the head should not be a problem
i always use fell pro gaskets . never had one fail
