Please. There is no such thing as a Mustang "Police Interceptor". That's a Crown Victoria thing. The term is SSP, for Special Service Package.
As far as the seat thing goes, do a quick search and you will find a LOT of threads with this information.

To answer your question, front seats from 87-04 should bolt right in. The backs, because you have a coupe and not a hatchback, will take some ingenuity. I've done it, it's not rocket science. Do a search and you'll find all the info you need.
