95gt Switch From Efi To Carb Issues

I recently purchased a 95GT track car with a dead 418ci engine and a'm considering my options. This engine combo was running the Edelbrock Victor EFI system and upon inspection of broken pistons and spark plugs it appears there was erratic rich / lean condition. Broken piston tops appear to be caused by detonation. Good 1- 4 pistons are not broken but show same rich / lean condition.
So I'm considering putting in a 363 short deck motor and since I have zero experience with efi I'm wondering what is involved from the wiring harness side to go with a carb ? Does the ECU need to be eliminated ? Do I need to rewire or what ? Any info on this change will be appreciated.

If I stay with efi, I might opt for the Trickflow efi intake system and then attempt to get it running with that. I'm older than dirt and a'm pretty intimidated with efi's and all the settings, parameters, etc.

What are your thoughts ?

There are a couple guys here that make the same claim about the dirt thing, as for the efi vrs carb, learn the efi stuff, once you get the hang of it you will realize how nifty it is, does most of the 'adjustments' for you and pretty much don't care about altitude or air temps. Try it, you'll like
 
Having never tuned either of those systems I cannot say one way or another. However 99% of it is the same, as long as it's speed density and you have access to the tune file there are a few of us here that can help you wade through it.
