Alternator question, ditching voltage regulator

[1993SSP]

I have a 86 model 4 cyl coupe that I am swapping over to a V8. I would like to upgrade the alternator and ditch the voltage regulator. How can I properly do this and keep the stock volt gauge working as well?? Which alternator would you suggest?? The only electrical mod in the future may be a electric fan.
