I usually just make up some jumper wires to connect the radio harness to a car battery sitting on the bench.

Yep that works also.
The power converter was nice as it has an on/off switch, in line fuse system, and the alligator clips making it easy to touch other wires for tests without having to disconnect anything and to grab several wires at the same time etc
it’s all the same though and whatever is available.

Update:
All done. She’s up and running 100%. Now I just have to fill in those holes someone drilled to install the aftermarket radio and paint with SEM black to finish it off. Thanks for everyone’s input which led to my confidence to try this project. If anyone is trying to do the same hit me up and I can explain how I did mine which may help you.
PS: autozone sells the tool to remove the radio for about 7 bucks.

A piece of metal coat hanger bent to that shape has been my go to for the last couple decades.

4 of those tiny eye glass screwdrivers work also among other things.

I've got about four sets of different types of radio removal tools, some are flat but they may be for aftermarket stuff too.
