Thicker walls, yes. Better fit, design (round or boxed - plus crafted not to interfere with other common suspension or other mods), seat brackets, full length (not short), powder coating. I asked this same question to a buddy of mine who works at a mustang shop (blue oval corral). He said there is virtually no real difference between cheap SF and the more expensive ones. They all do the same thing and your car won't feel a difference between $50 sf and $150 sf for a street/strip car. NOw if you plan on doing serious corner carving then get a good set.
