Is it reasonable to use these for the whole system? I figure it will flex more than hard line, giving soft pedal feel, and be more expensive. Are there any benefits to doing the whole system with braided SS?

It is not practical or advised in my opinion. Get the stainless steel hard lines form any of the Mustang vendors out there and use the braided SS for the hoses if you like.
