I'm thinking maybe about putting some sort of crate motor in my fox and running a crab vs staying efi. I've never owned a carb car, how are they to live with? I'm not looking to make gobs of power and it wouldn't be a daily driver. Would it be a fairly reliable ride all things considering? Would I need alot of extra parts to make it all work?

Why convert? If you already have a functional EFI makes no sense unless you were building a race car and didn't want to totally invest in a stand alone system. Cost more to convert and EFI is more efficient. Also don't you have to pass smog tests? Are they just sniffer tests or do they make a visual inspection also? You need the carb,intake,fuel and wiring changes, linkage,etc. not worth it IMO. Full on race car with nitrous then I could understand.

I would also like to see you stay EFI. The overall manners and drivability will be much improved over the carb setup in my opinion. Not to mention you already have EFI!

i also would recommend staying with EFI for all the reasons noted. and while swapping to a carb can be cost effective compared to EFI, in the end the advantages of EFI outweigh the disadvantages. as for chasing the emissions issues, chances are that you have a multitude of problems most of which will be solved with the new engine. you should probably also take the time to replace the sensors with proper factory ones, and check over your wiring connections, including the grounds, and make sure they are all clean and tight.

ive been tossing around the idea also but more for a power/tuning/cost deal...

i can make as more or more power with a carb and tuning it for me is cheaper

I think your situation is the perfect example of making the argument for switching. But for a DD/regular driver I wouldn't do it.

nah for a DD i wouldnt do it... for a weekend toy MAYBE depends what the deal with the EFI was and the route i was going with it.

the swap really isnt for everyone. setting up a carb isnt the easiest thing to do.

Try the carb setup. They have systems like progressive linkage which, can get you decent mpgs. I know there are simple carb kits you can buy for the EFI LS motors. I bet you can kind one for your car. Or just go carb setup crate motor. Do eet.
