That's what I ended up doing, I just bent down and ground the edges of the "speed wings" (heat shields) on the cats, and the problem is gone.
What really annoyed me is that on modular depot I was getting a whole bunch of flak about how I installed them wrong, and "so much for a professional install", and "there is no way that the cats should be anywhere near your subframes". Anyone who's ever installed full length SFCs knows that if you read the directions, they are almost impossible to install wrong. I don't know why my mid pipe is so wide, but as you can see in that picture, I'm not making it up, and I hardly think Ford installed the midpipe wrong from the factory.
Hopefully others who install full length subframe connectors on their GTs do not run into the same problems. If so, bending grinding some of the excess metal off of the sides of the catalytic convertors works well and solves the issues.
