Is there a trick to remove the tstat housing without spilling water?

Drain it

Drain it and squeeze the upper hose and work all the water you can out of it. After you drain it, jack the front end up to let the left over coolant flow towards the rear of the motor. Not much voodoo to it really.

What I do everytime and stuff a rag down low to catch any residual .
