When i pulled the heads on my 00 GT i took a glance down at the cylinder walls and to my amazement there was still very define cross hatching. Is this normal or should i start looking into the past of my car, BTW the car had 99k at this point, and i know that i have beat the piss out of it.

its normal. you can thank newer engine machining practices and higher quality engine oils.

When I pulley my old motor out, the cylinders were scored, and the cylinders were glazed over too a mirror finish. Very very poor tuning to blame. Always ran good oil. Royal Purple mostly. Car only had around 55k on it.

The ones that you can see allright in the picture still look great.

If it isn't giving you any problems don't even bother unless you want to... now IS the time since it's 80% apart, but that's only if you have any doubts about the future. If all the cylinders look like that, and it doesn't knock I wouldn't sweat it.
