Does this sound like a thermostate problem?

My car has the stock 2 core just recently purchesed b/c the old one crack and needed one in a hurry. I have a Mark 8 fan on it with manual switch so i *pretty sure* its not the fan cutting off to early. i have a 180 degree therm bout 3 weeks old....and its reading at a constant 195-210 while running normally at 195 but if i decide to get on it a lil bit in one gear it goes to 210 .....does this sound like a therm problem? should it be staying at 180?

i would say no to the thermostate. think if it was stuck open or stuck closed what would happen to your cooling system.
