Does your car go from 210* to 230* with the AC on?

The a/c isn't the problem. Your problem is one of your cooling accesories. When you turn the a/c on it just makes the problem more obvious. Even 210 seems a lil high for your car to be running at. Flush your radiator, check your fan, and all the hoses.
From what Ive heard, 210 is the normal operating trmp. And it matches up with the stock gauge.95Vert said:

Well the stock therm. is set at 196*. That's what I was basin my comment off. Other people go to 180*. Of course, the car runs a bit hotter, but 210 IMO is still a bit high. Not dangerously high, tho. I may be wrong tho.
Which is what Im guessing IS NOT happening. I dont think my high speed fan is coming on at all.Mrgreen94gt said:

These cars can be very odd, sometimes. If you have some way of running a KOEO(key on engine off) code scan, it will tell you if the fan motor is working properly. If it is, the ECT sensor is a likely suspect for the problem.

I do see an issue with that, and if you have noted your fan is indeed on with the AC, high speed not being on is quite likely IMHO.
I could get away with low speed and AC till about 95* temps. Then low speed wasnt enough and temps would creep up to 205*F or so.
Realistically, if the fan is pulling enough air, your car (with AC on, where high speed is running) should run at about 5* above your thermostat rating.
With AC off, then you have to wait till you get to about 208*F to get low speed to kick on naturally. if things continue to get toasty, high speed comes on in the high 220's (like Brian noted).
I'd take a look at the fan connector - high speed is known for getting toasty.
If one wants to ditch the stock set-up, I can't recommend the variable units from DcControl.com enough. You guys know how poor my butt is, and I still think it's worth every penny. I now run at 187* all day long except when it's 110*ish and I idle a lot - high speed simply cant keep up. That's a fan issue and nothing else.

Oh, Nacho has the right idea. With the AC on, the condensor (in front of the radiator) spits heat into the radiator, making the entire system work harder. Driving with AC definately stresses the systems more, which can show you issues that you otherwise wouldnt have seen. That's one reason the fan comes on immediately with AC.
The car should run at the stat rating *when* there's adequte air flow over the coil. So when at speed, the car should run at about 5* over the stat rating. BUT with our fan on/off temps, and the way antiquated fan relays and switches work, even if someone has a 160 stat, if the car is going slow or is stopped, it will continue to heat up till the fan comes on.
