engine rebuild kits vs. individual pieces AND piston questions

Hey folks,

I have a summit credit and I am building a low budget stockish 5.0 for a truck....I was wondering if I should get one of those Federal Mogul rebuild kits or piece it together?

Anyways, I already have head gaskets, valve cover gaskets, freeze plugs, and an oil pump. I will probably be using a ported intake so the stock intake gaskets with the kit probably wont work....

I am grinding the crank, though I don't know how much yet. I was hoping to just buy the bearings from the engine builder as he will know exactly what size....

SO....should I just buy a set of pistons or pistons and rings? What ring thickness should I specify? Dish, flat, 4 valve reliefs or two? Please advise!

I am tempted by these for the low price:
Federal Mogul ZWH654P30

But I wouldn't mind springing for these:
Speed Pro ZL2488F30 - Speed-Pro Power Forged Pistons

I read hyper might seal better, but forged will withstand power adders etc (which this engine will likely NEVER see...)

Please help me select the appropriate pistons, both in ring size, forged/hyper, and compression ratio.
