ok so Ive got some decent fabricating skills and tools such as a MIG welder, grinders, various saws, and things of that nature and I was wondering if theres any projects I could do to help out the performance of my car (87 gt vert). I built a bracket to mount my k&n to (its a conical one so I had to make a bracket to hold it to the fender) and im thinking of modifying my hood some. Does anyone else have some ideas? I cant do anything ridiculously complicated but I have some decent skills so feel free to throw some ideas out there.

You can start by making a heat shield for your new air filter. Bend a piece of sheet metal around the filter on all sides except the fender and mount it. This will help discourage it from sucking in all the hot air from under your hood. If you're real bored you can make a whole isolation box that forces in the air from the fender well (through the stock airbox hole) and blocks out everything else. And while you're at it you can make me a custom dash and center console...

jb is correct - more than likely your performance is worse with the conical under the hood than it was with the stock box. Hotter intake air kills hp to the tune of 1% less HP for each 10F increase in intake air. So fabricate something that allows that filter to pick up only cold air from outside the engine compartment.
