I like to look at target operating temps, not the stat rating so much anyways. Another thing to remember is what temp the OEM stat is supposed to be open fully. Add in some hysteresis and all bets are off. A balanced 180* stat makes a huge (relative) difference IMHO. Also look into some ancillary means of fan control or adjusting the fan thresholds downward to compliment the t-stat. Good luck.
