fan temps for 180* t-stat?

im going to get a 180* t-stat, because now with the heads, cams, high compression, ect..... it runs alot hotter then it use to, and the longtubes dont help with under hood temps either, what should i set my fan temps at for a 180 t-stat?

l yow speed on - 190
high speed on - 197
high speed off - 187
low speed off - 180
