Gasket sets?

I need some new gaskets for my engine that is being assembled. Should I buy a complete gasket set from felpro and then buy the intake and headgaskets that I want or should I just piece my own 'kit' together.

I also see that there are kits for early and late models. Does anyone know what differs from these kits other than the intake gaskets and the rear main seals?
