Gaskets for NOS

OK i have 1997 running right around 110,00 with a 125 shot hitting the intake , gaskets have NEVER been changed BUT the car gets a tune up every three months, Its my baby, What Gaskets should I change to when running NOS with high miles, and what else should I check out that may need changing.

Stock OEM head gaskets are fine. It it ain't broke ....don't fix it

but when running NOS at the high of milage what should I be looking for in the engine bay out of the norm...so to say..???
