Out of curiosity...does saleen change the gears in the S281 or do they keep the stock GT ones in them?

No.But they should,3.73 are much better.

For the non=supercharged cars 3:55's are an option.

Actually in 99 all supercharged s281's cars came with 3.08 gears. Most likely for epa and fuel reasons, but it probably also helped the top end a wee bit as well. If i am not mistaken, i have seen 3.55 optioned on a variety of saleens at team ford in atlanta. Not all being n/a, but they may have been dealer installed options.
